I usually dry them (and store the dried morels in the freezer, to prevent pantry moths from eating them up) — but last year I ate them all fresh. Too bad, because the dried ones have a deeper flavor that goes well with winter dishes.
I thought so! Hard not to eat them all, slathered in cream, right? To heck with low cholesterol.
